While most hot sauces are made in a matter of days, every bottle of Essence takes 90 days.
Olivier Beaulieu-Grise developed this slow, uncompromising method after 35 years working with the world’s finest flavors. The result is a hot sauce with rare depth, natural umami, and refined heat that simply cannot be rushed.
How Essence Luxury Hot Sauce Is Made
The 7-Step Process
1. Sourcing
Only the finest peppers at peak ripeness are selected for each batch.

2. Precision Preparation
Stems are removed. Only the purest part of the fruit is used and carefully chopped.

3. Cool Fermentation
The peppers ferment slowly at a steady 60°F in small 10-gallon earthenware crocks with onions, garlic, and a precise blend of rare spices (cinnamon, bay leaf, star anise, ginger, and turmeric). This low-and-slow fermentation develops complex flavor and natural tang that heat alone can never create.

5. Artisanal Finishing
Each flavor receives its own carefully chosen salt and vinegar:
• Habanero → Celtic sea salt + champagne vinegar
• Serrano → Fleur de sel + apple cider vinegar
• Chipotle → Black Kona salt + red wine vinegar
• Bird’s Eye → Japanese salt + rice vinegar

4. Blending
After fermentation, the spices (except garlic) are removed. The mixture is blended until perfectly smooth and velvety.

6. 30-Day Rest
The sauce returns to the crocks for another 30 days. It is gently mixed by hand each week until the flavor and texture reach perfect harmony.

7. Hand-Bottling
Every 50 ml bottle is filled by hand, personally signed by Olivier, and presented in a luxury gift box with a certificate of authenticity.
